Recipe of the month - using a Greenstar Juicer (or adapt to blender)
Strawberry Cream Pie
Crust
2 cups almonds (soak 8-12 hours, rinse)
4-5 pitted dates
Filling
5 bananas
1 chip strawberries
2 kiwifruit
1/2-1 cup currants
1 lemon
Machine Instructions
To make the dough put the closed blank screen over the twin gears and then put the pulp discharge casing on without the outlet adjusting knob. Place a 23cm pie dish under the outlet.
Preparation and Serving Instructions
1. Soak almonds 8-12 hours, rinse
2. alternate putting the almonds and dates through the machine and into the dish
3. Press the dough into the dish, then cover the bottom of the crust with two sliced bananas and put into the refrigerator
4. For the filling, in a blender (or through the juicer) mix two of the bananas, ¾ chip of strawberries, 1 kiwifruit, ½ cup of currants to desired thickness, spicing with lemon juice to taste, and pout of top of crust (save some of the fruit for decorating the top)
5. Serve fresh or chill and serve.
For an alternate filling use 2 fresh bananas, 4 frozen bananas and 16 pitted dates – put through the juicer, pour into the crust and place in the freezer for 1-2 hours before serving.
