Your go to Winter Soup


Picture this; a brisk winter Sunday, a pumpkin and a slow cooker. As fast as you pictured that, it was ready to go! Quick and easy this is my winter go to when i’m short on time but still looking for a good hearty meal to feed the crew.


1/2 a pumpkin

2 large potatoes

3 gloves of garlic

1/2 an onion


Pinch of curry powder

Pinch of nutmeg

1 cup vegetable stock

Fresh chilli


Simply chop everything up and throw in your slow cooker. Slow cook all day. If you have time, roasting the veges before slow cooking never goes a stray for extra flavour. Once its all tender and cooked, I like to whiz mine through my Tribest Personal Blender before either serving or freezing in portions for lunches or those dinner time panics. If you have to have that extra creamy finish try dolloping a few tablespoons of natural unsweetened yoghurt through before blending.
